Christmas Chilean Beet Salad

I found this recipe on a Trip to South America and added the quinoa, I love the color and the flavor is amazing.

8 to 10 beets, cooked and cut into ½ inch pieces
8 eggs, hard boiled and chopped
½ onion, chopped
1 cup cooked red quinoa
Fresh squeezed lemon juice from two lemons
Mayonnaise, about a cup or so, enough to make it nice

In a bowl stir together the lemon juice and mayonnaise till combined. Add in the rest of the ingredients and fold together until combined. Season with salt and pepper.
