Holiday Mandarin Orange Grain Salad


Ingredients

8 cups cooked grains, chilled, farro, spelt, softwhite wheat, or kamut
4 cups mandarin oranges
2 cups dried cranberries
1 cup toasted pumpkin seeds
2 cups pineapple tidbits
2 large cucumbers, chopped
8 cups romaine lettuce, chopped
1 large red onion, chopped

Directions

Toss all ingredients and prepare dressing and toss with dressing

1 cup olive oil
3/4 cup balsamic vinegar
1/4 cup honey
1 teaspoon salt
1 cup chutney or apricot jam
dash of cinnamon

Whisk together and toss with salad.
