Who is Chef Brad?

Born and raised in the White Mountains, Chef Brad Petersen is a native of Arizona. He started his career early in the food business. By the age of 9 he was doing the majority of the cooking for his family. By the age of 13 he had started working in a local coffee shop as a busboy. He did that for several years working his way around all parts of the restaurant business. By the age of 18 he was comfortable in all areas of the Food and Beverage industry. At the age of 19 he left the White Mountains to serve a mission in the Caribbean for 2 years. He loved the food there and spent as much time as he could learn the local recipes. The time spent in the Caribbean impacted his cooking with a wonderful flare of the Caribbean and a love for the Spanish language and people. After his mission he returned to the White Mountains for a brief time and then relocated to the Valley of the Sun, Mesa, Arizona, where he jumped right into the Restaurant business again doing all jobs from waiting on tables, bartending, banquets, cook, management, catering and consulting.

He has owned his own catering business, consulting business, kitchen store, and has owned his own very successful café where, of course, he served dishes designed around grains. He has gained an excellent reputation as a Chef over the years; his food is unique and fresh. His greatest love is of grains. He has devoted the last 15 years into the study of grains and has developed and written 4 cookbooks dealing with “Those Wonderful Grains”. He has a passion for teaching and education. He travels all over teaching the many things he has learned about nutrition and health. He has developed a wonderful following and is respected and admired for his gift of making healthy food taste great and inspiring others to eat better and enjoy time spent in the kitchen.

Currently he has his own cooking show, Fusion Grain Cooking that airs on BYU TV and he works for Thermador Appliances as a national spokesperson and Executive Chef. Operates a wonderful expanding internet site, and travels all over the United States teaching about grains. He is passionate and full of energy. He is a gifted teacher and loves people. His greatest love is for food and he believes in creating “Fond Food Memories” whenever possible.

Chef Brad’s greatest dream is to have open up a real “healthy” café and bakery where the food tastes so good no one will even know how healthy it is. He dreams of lines of people waiting to sample his food.

Chef Brad’s love for grains and food has made him a leading authority in America on grains and the history of grains. He believes strongly that America is ready for a change and is starving for knowledge on how to eat better and be healthier. He believes strongly that almost all of the health problems we are faced with today are a result of our poor eating habits. His belief is that “healthy can taste great” and has proven that it can time and time again.

Chef Brad’s mission statement is to “Inspire people to get back into the kitchen and enjoy creating “Fond Food Memories” eating healthy foods that taste great.
